Whole Roasted Chicken

Ingredients:

  • 5-6lb chicken 

  • 1/2 stick of butter

  • Salt

  • Pepper

  • Lemon Pepper rub

  • Thyme

  • Basil

 

Directions:

  • Pre-heat Oven to 450

  • Remove gizzards from inside chicken

  • Pat dry

  • Salt and Pepper bottom side of chicken

  • Soften butter and mix in salt, pepper and herbs 

  • Separate skin from the breasts of the chicken

  • Press butter mixture evenly inside

  • Using extra spread on outside of chicken legs and wings

  • Salt and pepper outside of chicken

  • Spray roasting pan

  • Place chicken inside

  • Bake covered for 45minutes

  • Uncover and bake for 35minutes

  • Allow to rest for 10minutes before slicing and serving

Risotto

INGRIEDENTS:

  • 1 cup Arborio rice

  • 3 cups stock

  • 1/2 cup white wine

  • Salt

  • Pepper

  • Parmesan cheese

  • Italian Seasoning

  • 1 shallot

  • Garlic

  • 2 tbsp Butter

  • 2 tbsp Olive Oil

 

DIRECTIONS:

  • Sauté shallot in butter and olive oil 

  • Add rice and continue to sauté for 2 minutes

  • Add garlic

  • Add 1 cup stock

  • Stir until all stock is absorbed

  • Continue with the last 2 cups of stock, stir frequently

  • Add wine and stir

  • Add salt, pepper and Italian seasoning to taste

  • Add 1/2 cup of Parmesan cheese
